Mini Baked Cheesecakes with Strawberries The Costco sized box of gingersnaps in my pantry inspired me to make this, not to mention how much weabsolutely adorecheesecake around here. I saw this over at The Ungourmet and knew this was a quick and easy dessert, with no waiting overnight for the cheesecake to chill. Also, making these inmuffin pans withbaking cupsmade it even easier. Hardly any mess! Aren’t they sweet looking and perfectfor a weeknight dessert? These could be made for a range of occasions with lots of different toppings, fillings and crusts. Enjoy! Preheat oven to 325 degrees. Put the cookies into a food processor and pulse until you end up with coarse crumbs. Place a Tablespoon of the cookie mixture into each paper cup and press firmly into the bottom. Cinnamon Roll Pumpkin Vanilla Sheet Cake I love watching the reaction of my boys sampling my baked goods. I gave them a bite after school a couple days ago of this sheet cake and their expression was priceless. If I left the room, I am afraid the entire plate would have been devoured. I ran across this recipe on Baked Perfection and I thought of how great it would be to serve at a birthday party or class party because of the fun colors. I also know they make funfetti cake mixes with holiday colors so it would be a fun cookie to serve at a holiday party. They are so soft and moist and make for an awesome sandwich cookie. Creamy Blackberry Frozen Yogurt Summer has been so good to us this year. I'm trying desperately to hold on to any remainders of this wonderful season. I've already frozen tons of slices of peaches for a cold winter afternoon when I need a juicy peach cobbler. I'm now making my way through all the blackberries we have close to our house. Jam will be made, don't you worry. Creamy Blackberry Frozen Yogurt(printable version) 3 cups fresh blackberries3 cups yogurt cheese (or Greek yogurt)1 can sweetened condensed milk ( 14 ounce can, it's fine if it's a bit more or a bit less)In a blender, puree the blackberries with the sweetened condensed milk.In a medium bowl mix the puree with the yogurt cheese.Pour the mixture in to your ice-cream maker and follow the manufacturer's directions.

Oreo Stuffed Chocolate Chip Cookies Alright, confession time. My first impression of these cookies was not a super positive one. I mean, don’t get me wrong…I love a good chocolate chip cookie. And Oreos easily top the list among my favorite “store bought” cookies. The idea of combining them just threw me. When I first saw this Oreo creation on Picky Palate I thought they looked a little gross (sorry Jenny). I am really not even sure how to describe these.
