Sapote. De même origine que la sapotille et souvent confondue avec elle, la sapote a une répartition plus stricte car sensible au froid. L’arbre se distingue du sapotillier par ses feuilles plus larges, ses fleurs produites le long des rameaux et par son grand fruit à la peau brune coriace et rugueuse. La maturité du fruit se détermine à l’instar de la sapotille. La pulpe saumon-rose à rouge brun a la consistance de l’avocat. Douce et très sucrée, elle se mange à la cuillère une fois ses grandes graines brunes ôtées.
L’amande râpée des graines parfume les gâteaux. Auparavant, l’amande entrait dans la composition d’une liqueur (crème sapote).
