This cake reminds me of a cake I used to bake many years ago which used condensed milk too. We always have condensed milk in the fridge as my mother used it to make our hot drink like Milo (hot chocolate) and coffee. Old Fashioned Butter Cake. This kind of butter cake is very popular during Chinese New Year. I remember my mom used buy lots of it and we will have it a cup of kopi O (dark coffee) for breakfast or throughout the day and serve it to guest that come for a visit too. Normally I will add some raisins or dried cranberries to it. I like the taste of this cake as the raisins soaked up all the rum and gives this cake a very nice flavor. You can always adjust the amount of rum that soak the raisins to suite your taste. Soaking the raisins in rums keeps them moist and soft. The rum is not too overwhelming but you will know it is there when you bite into it and it goes perfectly well with a cup of coffee. Even this has dissappeared from the market shelves these few years)Many Malaysians do not realise this, as when I chatted with them on this matter they went "Huh?? Is it? They've changed? " I even emailed Nestle on this matter many years back, and they did respond to me saying that it is no longer sold in Malaysia for many years, but it is available in Singapore. My dear Malaysians, Read the labels!!! When I was small, I loved Nescafe with condensed milk.. the flavour really comes out good...... but as I grew up, I wonder where did the fragrance go???

But just because it’s the classic way to do it, doesn’t mean mean I don’t think most pound cakes need a little extra creativity to keep them from becoming foamy, forgettable bricks. You can swap out some of the butter for cream cheese, as I do in my favorite non-traditional pound cake recipe, you can add loads of lemon, baking powder, baking soda and buttermilk, rendering something that is impossibly delicious but really, a pound cake in name only, or you can do as James Beard does, and apply smart cake-baking techniques to improve the predictable.
