Moroccan-Spiced Carrot Hummus. Chicken Liver Pâté with Sage, Apple and Thyme. With the approach of the holiday party season, I am always on the lookout for make-ahead appetizers that are a little different from the usual spread of cheeses, meats and crudite.
Spring Recipe: Creamy Parmesan Dip. Every dip, like every food, has a season.
So if warm, oozy baked brie is just the thing for winter, what's the best dip to serve come spring? Summer Snack Recipe: Creamy, Cool Herbed Yogurt Dip. It doesn't often get swelteringly hot in Seattle.
Even in the heart of the summer, we'll have a few record-setting days, but rarely more than a handful. But when I visit my mom's cabin in upstate New York, the marriage of heat and humidity can often make for pretty uncomfortable days and a loss of appetite — which is why we always have this cool, easy yogurt dip at the ready.
Easy, Colorful Appetizer Recipe: Creamy Beet & Tahini Dip. We have a great Middle Eastern grocery a few miles north of our house in Seattle, and given that my boyfriend Sam is Lebanese, we visit often to stock up on chickpeas, good feta and tahini — the latter being the one non-negotiable; we're always stocked with tahini.
Creamy Tofu and Green Pea Dip. Silken tofu makes an excellent base for creamy dips without the use of sour cream or other dairy.
In this bright and zesty green dip, we combined tofu with peas and Mexican-inspired ingredients like cilantro, jalapeño, and lime. Unlike dairy-based dips that can weigh heavy on the palate, the creaminess from the soft tofu is satisfying yet light. Fava Bean Dip with Roasted Garlic and Yogurt. Sometimes eating light in January is just too darn hard.
There's not a lot of green, not a lot of crunchy vegetables. So we broke down and bought a mess of expensive hot-house vegetables the other day, whittled baby carrots and all. The snap and crunch of carrots and cucumbers was so delicious (although those baby tomatoes were terribly anemic). We needed something to round out our guilty winter vegetable plate, something that would make it a healthy appetizer or meal. Fresh Summer Recipe: Dandelion Pumpkin Seed Pesto. People can be protective about their pesto recipes and approaches.
A little extra garlic or the special way they grind down the pesto? It's the magic touch. This is largely because pesto is so adaptable: you can create a signature pesto of your own using different nuts, greens, cheeses and spices. And that is exactly what we have here. I recently had the opportunity to sit in on a Cooking with Herbs class taught by cookbook author and amazing gardener, Willi Galloway. Healthy Dip Recipe: French Onion Dip with Caramelized Onions & Greek Yogurt. While I probably won't be watching the Big Game this weekend, I'm not immune to the fact that this means we're heading into prime chip and dip season.
In honor of this, I'm excited to rescue and rethink a once famous and now somewhat neglected dip from my childhood: The French Onion Soup Dip. This is my new take on this iconic dip, which substitutes Greek yogurt for the mayo and sour cream and swaps in real onions and other aromatics for the somewhat questionable ingredients in that packet of dried French onion soup. The classic French onion soup dip recipe from my childhood involved folding a packet of dried soup mix (either Knorr or Lipton) into a container of sour cream.
Zucchini, Mint and Yogurt Spread. We get a lot of recipe inspiration from restaurant dishes.
One recent meal inspired not only a recipe, but a serving idea, as well. We tried a trio of dips at Chickpea, a Middle Eastern restaurant in Chicago, and the one that really got our attention was a zucchini, mint and yogurt spread called Koosa ma Laban. But we were also quite taken with all the wonderful colors in the restaurant's decor and serving plates. Many restaurants (and foodbloggers - ourselves included) tend to stick with white dishes to show off the food, or at least neutral colors. Chickpea goes in the opposite direction, spreading its dips onto mismatched dishes with vibrant colors and bold patterns, and topping them with even more color in thoughtful garnishes. Baba Ghanoush (Eggplant Dip) For a long time, the idea of eggplant made me slightly queasy.
It was a weird vegetable — kind of soft, kind of bitter, unpredictably textured. Summer Snack Recipe: Creamy, Cool Herbed Yogurt Dip. Horseradish Sauce Recipe. I know you all like a simple, goes-on-anything sauce. It has been a while, so I thought I'd shoot this gem in your direction. It's a good one. The main ingredient: horseradish. Guacamole Recipe. If pressed, I could tell you how to make good guacamole in one sentence. Something like this - mash ripe avocados with finely chopped white onions, a minced garlic clove, a squeeze of lime juice, then salt to taste. But to make great guacamole, it's the little decisions going between those commas that make all the difference. If you were standing next to me throughout the process, you'd pick up on the dozens of choices and considerations that actually matter. Cheesy Baked Black-Eyed Pea Dip. Sometimes great recipes happen by accident, like this insta-classic black-eyed pea dip. This past weekend, I was planning on doing laundry and lounging around the house, but my fiancé seemed to have other plans.
I strolled out of the bedroom dressed in my "sexiest" cleaning attire (i.e. disgusting t-shirt and messy ponytail), only to find a handful of his football—and food—loving friends camped out on the couch, ready for some NFL playoff action. Spicy Appetizer Recipe: Roasted Jalapeño & Lime Hummus. One jalapeño if you like a little tingle on your tongue. Two if you're feeling feisty. Three jalapeños and you'd better make sure there's plenty of cold beer nearby because you're talking about some serious fire. I never would have thought about adding jalapeños and limes to hummus if a friend hadn't discovered this dip at our local gourmet market and convinced me to try it. The jalapeños hit first, then came the cooling lime just when the heat of the peppers almost seemed too much. The nuttiness of the chickpeas and the creamy texture of the hummus made the perfect backdrop.
OLIVEY CAESAR DRESSING. I work part-time at a grocery store, so I am aware of consumer buying trends based on season and weather. We sell twice as much soup when it's raining out, more pre-packaged food is sold during the week for the work crowd as opposed to weekends, we'll sell out of sea salt caramels first, without question, out of all the holiday treats, and as soon as January 1st hits, the "lettuce wall," as we call it, needs to be completely replenished every hour for the resolution setters.
But don't worry, that only lasts through January and then we can bring the chip and cookie numbers back up. We are a predictable people group, I'll say. Next year when I am working off the pregnancy nachos I may be more motivated to construct a program to post here.
