Wash and dry the bhindi and wipe with a kitchen cloth. Cut both the ends of the bhindi and cut into two inch long pieces. Heat the oil in a kadai and add the cumin seeds. Add the green chillies and saute for one minute on a low heat. Add diluted red chilli, coriander, and turmeric powder (spice mix) and tamarind paste (if using or sprinkle amchur powder finally).
