Garlic Knots Recipe | Garlic Rolls Bread
For 10 years my working life was swallowed up by a cafe/market where we made some of the most badass garlic knots around. Those combined with an espresso were my regular sustenance on countless non-stop, never pause for a breath days. Screw the labor laws with required break-times, as a GM there is too much to be done in too short of a time. The garlic knots were the perfect grab-&-go nosh. During this same time, I became obsessed with making breads. Fast forward to recent history; the years in the restaurant business are quietly tucked under years of photography work, my bread making passion had calmed giving way for other culinary explorations. Through experimenting with techniques and observing our favorite bakeries production, I started letting go of the need to knead the dough into submission. cheese cloth over knots during their rise With Garlic Week rolling upon us, when Diane suggested garlic knots as our contribution, the tide of memories stirred my heart and I was all in. 1.
sour cream coffee cake
When I got my tube pan, I thought it would be one of those kitchen implements that would live in the nether regions of the cupboard. I foresaw it being overshadowed by more useful (9×13), less cumbersome (the regular old 10-inch cake rounds), and oh-so-pretty (tart tins in, I confess, all sizes) pans. So, I was surprised last summer when I used it to make angel food cake quite a few times. No matter how deeply stashed away it was, I continually found myself plucking it out. So, I figured it would be a seasonal thing. (Click “more” for the rest of the story, more photos & the recipe.) I guess it should come as no surprise, then, that it was another Ina Garten recipe that had me excavating my tube pan this January. And this cake can pretty much guarantee that the tube pan will now become a non-Angel-food-cake-season staple as well. The only hiccup with the cake was the fact that Kevin’s dad arrived for the brunch bearing…a coffee cake. Sour Cream Coffee CakeIna Garten Like this:
Preserving Herbs
Looking for more ways to preserve your harvest before frost claims the less hardy plants? Preserving herbs is easy and can bring the summer taste of your garden to your cooking all winter long. Simply hanging the herbs upside down to dry, then bottling them in glass jars is a great way to preserve many herbs including thyme, parsley and oregano. If your cilantro has gone to seed, let those plants dry too. Picking off the coriander seeds is a bit time consuming, but grind them in a mortar and pestle and they’re a delicious addition to seafood and vegetarian dishes. You may find that some herbs retain their flavor better when frozen rather than dried. Herbs that are going to be used in soups or drinks can also be frozen in water in ice cubes trays. Another option is to follow the very old tradition of preserving your herbs in salt. There is no set recipe for salted herbs. For leafier herbs and greens, make pestos and keep them in your freezer.
