When I was stuck in airports a few weeks ago, I ended up buying more than my share of magazines. This weekend I picked up a pint of blueberries at the market eager to get started on my unconventional focaccia recipe. When I pulled the bread out of the oven it was a beautiful sight. Blueberry Focaccia from O magazine I cut my recipe in half and it worked out well. 1 package (1/4 ounce) active dry yeast 2 1/4 cups warm water 6 cups all-purpose flour 1 cup light brown sugar 1 tsp. salt 1/2 tsp. ground cinnamon 1 large egg 6 Tbsp. unsalted butter, room temperature Vegetable oil, for greasing 2 pints (5 to 6 cups) blueberries1 In a small bowl, mix yeast and water; set aside until foamy, about 5 minutes.
15 Minute Creamy Avocado Pasta Oh…my….gosh. Alert the grocery store because there is going to be an avocado shortage in my town. Well, more than usual that is. [And yes, I said ‘store’. As in singular…We’re small town folk.] You can whip up this pasta dish in under 15 minutes flat! Yield3 servings Prep Time Cook time Total Time Ingredients: 9 ounces (255 g) uncooked pasta (use gluten-free, if desired)1 to 2 small cloves garlic, to taste1/4 cup fresh basil leaves, plus more for serving1-2 tablespoons fresh lemon juice, to taste1 tablespoon extra-virgin olive oil1 ripe medium avocado, pitted1/4 to 1/2 teaspoon (1 to 2 mL) fine-grain sea saltFreshly ground black pepper, to tasteLemon zest, for serving Directions: Bring a large pot of salted water to a boil. I used some fun pasta to increase the nutrition factor- first, 1 serving (3oz) of spelt pasta. Spelt pasta has a great nutritional profile with 12 grams of protein and 3 grams of fibre per serving. Cinnamon Streusel Pancakes | Two Peas & Their Pod - StumbleUpon Cinnamon Streusel Pancakes When we went to California in November, we spent a day eating our way through Los Angeles with our good friend, Amanda, from Kevin and Amanda. Amanda had a long list of food places for us to try. We started our food feast at The Griddle Cafe in Hollywood. Amanda recommended the “Recess Time” pancake, which is a double-filled cinnamon streusel pancake. We took her advice and ordered the pancake and I am so glad we did. The pancakes at The Griddle Cafe are humongous! We were determined to recreate our favorite pancakes at home so one morning we put our game faces on and got to work. Josh let a big scoop of butter melt all over the pancake, making the pancake even more decadent. I will warn you these pancakes are insanely sweet. broccoli parmesan fritters Last week, it was pointed out to me that among the 750 recipes in the archives, there is but a single recipe that utilizes broccoli. Just one! (It’s a great one, though.) For comparison, there are 11 recipes that use cauliflower and 26 with mushrooms. Please understand: this is not one of those stories about how preciously advanced my toddler’s tastes are, how early he took an interest in foie gras and how he turns his nose up at white flour pastas, preferring farro. I have a theory that you can tuck almost any finely chopped or shredded vegetable — be it potatoes, zucchini, or an Indian-spiced mix — into a savory pancake, fry it in small mounds until crisp on both sides, serve it with a dollop of a sour cream or yogurt sauce and they will be inhaled. Lemon and Garlic Grilled Chicken This grilled chicken will rock your world. It is amazing. My sister-in-law, Erin, who posts over at The Sister’s Cafe , gave the recipe to me years ago. I loved it the minute I tried it but haven’t made it in a while until my brother reminded me about it a few weeks ago. I’m so glad to be back in the saddle with this recipe again! Lemon and Garlic Grilled Chicken Ingredients Juice of 1 lemon, approximately 3 tablespoons 3 tablespoons olive oil 1 teaspoon minced garlic, about 2 medium cloves 1 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon dried oregano 1 pound chicken breasts (I usually cut really thick chicken breasts down to thin them out and make the pieces a little smaller so they absorb the marinade better) Directions Combine all marinade ingredients. Banana Ice Cream Sandwiches & Veggie Wedgie I really love frozen bananas-who doesn’t? Raw banana ice cream has been one of my favorite treats since last summer- it’s so easy and quick to make! Now that the weather is warm again, I started making it more often but this time I thought I should try something different- I wanted to make ice cream sandwiches with banana filling, and since I was making the filling raw, I thought that it would be cool to also make the cookies raw, no? The result was pretty good : a very light, dairy free and nut free creamy treat! I must warn you though, the ice cream is not very sweet ( I like it better that way), so if you want this to taste more like dairy sugar load ice cream, I suggest you add a couple tablespoons of agave syrup when you blend the filling. Ingredients For the cookies : -1 cup oat groats or 1 1/2 cup oat flour -1/2 cup raw cacao powder -200gr dates -3 tbsp coconut butter -2 tbsp agave syrup -1 tbsp water Filling : -6 frozen bananas -1 vanilla bean, scraped

Cinnamon Toast&Rolls The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate. I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious. In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep.
