Homemade Nutella There’s something so wonderfully addictive about Nutella. I’m not sure what it is, really, maybe the aroma of the hazelnuts mixed with the soft texture of the chocolate, and the knowledge that you can spread it on your favorite foods and call it breakfast the way the Europeans do. Clearly, the Europeans are very intelligent when it comes to breakfast. When I saw this recipe for homemade Nutella from Elana’s Pantry, I loved the simplicity of the ingredients that she used. It also, quite honestly, looked good for you! She uses agave instead of refined sugar, simple unsweetened cocoa powder and protein rich nuts. You begin by laying the hazelnuts out on a sheet tray or roasting pan and roasting them in the oven for 8-10 minutes. When they are ready they will be slightly darker and their skins will crack. This is good because you now will need to rub the skins off with a paper towel. Then transfer the nuts to a food processor … And blend away. Now you add the cocoa … The vanilla … The salt …

Vegan Baking Community Inspiration Vs. Desperation What spurs you on to create new recipes? Inspiration comes in countless forms, lurking just beneath the surface everywhere you look. It could be a trip to the market that lights a spark, or a great meal at a new restaurant. Even something as innocuous as watching tv or chatting with a friend might start the wheels turning. Some recipes, however, have decidedly less grand beginnings. Adding a single box of phyllo to a recent coop order seemed like a reasonable impulse buy to complete the case- A least until it arrived, and needed somewhere to stay. Still waffling between sweet and savory recipes, it was the idea of Susan‘s Spinach and Artichoke Pie that sealed the deal. Though I’ve been spending lots of time reading cookbooks and finding recipes that give me plenty of inspiration, when it comes time to actually go into the kitchen and cook something, I seize up and become completely incapable of deciding what to cook. Then I wind up throwing together my dirty secret soup or an old favorite like arrabbiata or just give up and call the nearest sushi place for takeout. I call it food blogging burnout but it’s probably some kind of low-level depression caused by too many rainy days and too little sunlight. Now, I’m telling you all this for a very simple reason: I’m hoping you’ll take it easy on me when you see the following recipe, one that’s guaranteed to offend everyone from lunchbox gourmands to raw foodists. Creamiest Tomato Soup With Cashews The following is a guest article written by Alix Radford, of CuteandDelicious.com. When the weather gets cold, I love a rich, creamy bowl of soup. Who doesn’t? I finally decided to try and make my own tomato soup; it seemed only logical. The key to making it so rich and creamy was cashews. I most definitely had seconds (and thirds). Creamy Tomato Soup 1/2 cup cashews 1/2 cup vegetable broth 2 Tbsp. In a food processor, blend together your cashews and vegetable broth until smooth. It will be fairly thick, so if you like a less robust soup, add more vegetable broth.
