[donotprint]I love to stuff portobello mushrooms. Their shape and size are perfect for that and it’s just so much fun. Grab a portobello, clean it up, season it, stuff it and cook it.
Mexican Tortilla Pizza
Taco Bell is my absolute favorite fast food place in the world. Oh stop, don’t judge me for it. It's a chain I have loved since the age of 14 and the older I got my affinity towards TB only grew stronger. My most favorite items are the Bean Burrito, 7-Layer Burrito, and Mexican Pizza with Beans! Yes, I usually don't eat meat at most fast foods, it’s my thing. Since I do watch what I eat most of the time, I can't afford to eat Taco Bell as often as I'd like to, however I am capable of replicating some of their delicious dishes at home.

A new year always brings new resolutions. And I do have new resolutions (in a post to come), but this would be the same resolution I’ve had pretty much every year that I can remember – get healthier. Hopefully this is the year that sticks. It has to stick through January, because I’m in a group of ladies trying to lose 10 pounds by February 4th. Even if it doesn’t stick all year, a month of healthier eating/exercising is better than nothing, right?

It wouldn’tbeHanukah if I didn’t refresh my favorite, dead-simple potato pancake recipe. But it wouldn’t make for a very interesting story if I told the same one every year; in fact, I think they get better with each try because I continue to tweak them ever so much. This year, after finally making peace with my cast frying pan (coincidentally, over an “apple latke”) I cooked them in there, and will use no other pan for them as long as I live. It is a browning genius, and even small amounts of oil resulted in no sticking whatsoever. I also realized that I found them a bit on the salty side — something I noted last year and entirely forgot in the 12 months since — I hope to remember that next year. Next, I at last retired the sieve-pressing for a cheesecloth-squeezing.
