Bacon Double Cheese Burger Dip
The Super Bowl is quickly approaching and that means that it is time to start dusting off some recipes for snacking! I am a big fan of hot melted cheese dips and I had an idea for a new one, a bacon double cheese burger dip that has all of the flavours of a bacon double cheese burger. Beef is the main part of a burger so I started out there and I added some ingredients that I commonly add to burgers including onions, garlic and worcestershire sauce. Next up was the bacon and then the cheese and I included both cheddar for the flavour and mozzarella for the stringy melted goodness. I went with the standard hot melted cheese dip ingredients including the cream cheese, mayonnaise and sour cream to form the base of the dip. If you cannot live without lettuce and tomatoes in your burgers then topping the hot bacon double cheese burger dip with freshly diced juicy tomatoes and sliced crisp lettuce is the way to go and I highly recommend that you try it! Sweet Chili Chicken Quesadilla
Sometimes my freezer seems like it is an uncontrollable monster that is always full and I am engaged in an unending battle to free some space in it. Although it is sometimes scary to do so, I like to try opening it up every once in a while to try to find something to use to make some more space. When I braved opening the freezer up this time I found the last of the salsa naranja that I had made a few weeks ago and I decided to finish it off. The salsa naranga is a salsa with a base of oranges and sweet chili sauce that is built up with chilies and plenty of fresh herbs. I was thinking that some sweet chili sweet chili quesadillaswould hit the spot, I mean its hard to go wrong with a lightly toasted tortilla overflowing with melted cheesy goodness, and as luck would have it, I also had some leftover shredded chicken in the freezer. In addition to the cheese, chicken and salsa I added some sauteed onions and even more fresh herbs to round things out. Does this look good? Printable Recipe
Baked Brie Topped with Caramelized Mushrooms
Although I can sometimes go all out with the holiday cookie baking, I try to not to forget about savoury treats which are always a welcome change. A couple of years ago I discovered a savoury baked brie with cranberry sauce that was so amazingly good and I have been hooked ever since. When I came across a recipe for baked brie topped with mushrooms on Mushooms Canada there was no question as to what savoury appetizer I was going be making this year. The idea is pretty simple; you saute and caramelize some mushrooms and onions, toss them on some brie and bake it until the cheese belts. The baked brie topped with caramelized mushrooms was everything that I had been hoping for and then some! Does this look good? Mushroom Quesadillas
It had been way too long since I last had a mushroom fix and I was still remembering that mushroom melt sandwich that I made a while ago. Thinking about that ooey gooey melted cheese made me think about another of my favorite foods, quesadillas. Quesadillas at their base are two tortillas filled with cheese and they are toasted until the tortillas are nice and golden brown and crispy and the cheese has melted. To the basics of the tortillas and the melted cheese you can add anything that you want and the cheese works really well at holding everything together. I could not believe that I had not yet tried a mushroom quesadilla and that had to be rectified immediatly! Does this look good? Tip: Place a plate onto the quesadilla and flipped it from the pan to the plate and then slide it back into the pan to flip the quesadilla.
Pizza Dip
Over the last while I have slowly been trying to free up some space in my freezer and I recently came across some pizza sauce that I had left over after making a pizza a while back. As soon as I stumbled upon it I remembered thinking that I had wanted to use it to make a hot cheesy pizza dip when I put it in the freezer. Once I had that thought there was no turning back and I was already dreaming up recipes for the dip. At first I was just going to follow my standard hot cheese dip template where I just mix everything up, pour it into a dish and bake it until the cheese is melted, golden brown and bubbling but then I had another idea. I wanted to top the dip with slices of pepperoni but my normal dip baking dish is small and it would only allow for about three slices of pepperoni to go on top so I needed something bigger, like a pie plate. Since this pizza dip is in the form of a pizza, you could top it with any of your favourite pizza toppings. Pizza Dip Servings: makes 4 servings

"All the SIIIIIngle ladies! All the single ladies. All the SIIIIngle ladies! All the single ladies. I was totally singing this song in my head when I was making this muffin. Although I don't live on my own, I might as well as far as the whole food situation goes. Yes, that sounds wonderful, but it doesn't really agree with my resolution to only eat when I'm hungry and get better at listening to my body. I made this only a few hours after lunch {honestly, sometimes I make things for the sole purpose making things. Or for dinner after the gym cuz leg presses suck. Ten minutes later, that muffin was nowhere to be seen and I had chocolate all over my face somehow… I dunno. I've really been loving experimenting with vegan baking {and vegan EATING in general. One of the many plus sides of vegan baking though? Anyhow.
