I have never encountered a dish that is so basic and simple to put together yet creates such a big pay off. To make this chicken, which you should absolutely do immediately, preheat your oven to 450º F. Put 1.5 pounds of boneless, skinless chicken thighs into a foil-lined or disposable oven-proof, 8×8 inch baking dish. Put the chicken thighs into the oven, and let them bake for 40 minutes or until a meat thermometer reads 165ºF. I adapted this recipe from “The I <3 Trader Joe’s Cookbook” by Cherie Mercer Twohy. Fifteen Minute Salsa Verde Eggs Recipe The idea of eggs cooked in some kind of spicy sauce is what has inspired famous dishes like Shakshuka and Huevos Rancheros. I could have been thinking something like that when this simple breakfast idea popped into my mind, but truthfully I think the recipe was most inspired by a jar of salsa verde that I stumbled across in the pantry. These days I'm alternating between trying not to think about my pantry (full of various heavy cans and bottles that will need to be moved to the new house) and gazing into the shelves trying to imagine what I can use up before moving day. This was one of those "What can I make with ingredients I already have?" kind of experiments, and wow, did I love this easy breakfast. There are two reasons for putting the eggs into little dishes before you start heating the sauce. I made a single serving in an 8 inch frying pan; just double the recipe to make Salsa Verde Eggs for Two in a larger pan. Then gently nestle the eggs on top of the spicy sauce. Instructions:

Dukan Pizza | The Dukan Diet Way All I can say is oh my God! This pizza was amazing! If you like thin crust pizza, then this is for you! I was so excited that I had to post this right away. The recipe is easy to follow I’m thinking that you could also make the pizza base and use it as a pita bread for something a little different…. Since it can get boring unless you use your imagination. Here’s how it all came together! 1 teaspoon – Baking powder 1 teaspoon (grated) – Cheese Basil chopped Smoked salmon 1 tablespoon – Corn flour 2 Egg 2 tablespoons – Oat bran 1tablespoon – plain yogurt Small amount of pesto sauce for base Put the eggs, yogurt, oat bran, cornflour, baking powder and spices into a bowl for mixing. Mix all the ingredients in the bowl and pour it out onto the pan. When the bottom is done, and the top still a bit liquid on top, put a bit of pesto on top with tomatoes cut into pieces, sprinkle with grated cheese. Well, it’s making another appearance in this pumpkin french toast. I’ve always made french toast the traditional route: dip bread into egg batter and fry right when you’re ready to eat. The ‘batter’ consisted of several free range eggs, a healthy dash of milk, a scoop of pumpkin butter and plenty of pumpkin pie spice. You guys, it’s possible that I’ve never been so excited to hop up out of bed on a Saturday to preheat my oven. As you can see, it turned out phenomenal. Topped with a little maple syrup (agave or honey) and it’s phenomenal. If there’s just two of you dining on this breakfast, simply cut the recipe in half or even one-fourth for a more appropriate serving size. Mine got really tough after a few minutes and by the end of the 20 minutes of stretching I was starting to sweat and my arms were starting to shake. Okay, maybe it wasn't that bad! Crock Pot French Toast: I got a crock pot for Christmas last year after having to borrow my mom’s for last years Thanksgiving dinner extravaganza. I made half of what her recipe calls for as my crockpot is a bit more on the petite side. Ingredients: 1/2 loaf of bread. I don’t recommend wheat bread generally though honey wheat is pretty good as french toast. Break up bread in half pieces. Combine: 6 eggs, 2 c milk, 1 tsp cinnamon, 1 tbsp light brown sugar, and 1 tsp vanilla. Pour over bread if you’ve already placed in the crock pot. Like this:
