Oatmeal Pancakes I like oatmeal. I like pancakes - but they have to be light and fluffy, not heavy and thick. I found a great recipe for oatmeal pancakes, which was a great combination of two good foods. At first I was a bit scared it would be maybe like fried up oatmeal, but it wasn't. And the pancakes were still light enough I could handle it. Oatmeal Pancakes 2 cups oats (the regular kind - Old Fashioned or Quick, not steel-cut and not instant)3 cups buttermilk3 eggs, well beaten1/2 cup flour1 1/2 teaspoon baking powderDash salt1 Tbsp peanut oilButter or extra vegetable oil for the griddle 1 Put oats into a large bowl, add the buttermilk. 2 Mix in the eggs, flour, baking powder, salt, and peanut oil. 3 Then proceed as with any pancake recipe. It was time to put a spin on gourmet pizza, but I just didn't know what it would be. Without pizza dough or an oven that is capable of creating the perfect pizza crust (I don't have an oven that can go up to a 1000 degrees), I decided I would use potatoes instead. For 4 small, personal sized pizzas 4" in diameter, you will need: 2 large potatoes peeled and cleaned4 teaspoons salt (to flavor the potatoes) I'm doing four different flavor combinations here, and the measurements for each combination will top 4 small pizzas or 1 large pizza.
