Baked Brown Rice Risotto |Gluten-Free Goddess® Recipes It's one of those Tuesdays when I have leftovers, again. And as the saying goes- she lives twice who lives well. I happen to think it's fun and challenging to use up leftovers in a creative way; and besides, Bubula, who likes to waste food? I had a scant serving of Vegetarian Mulligatawny left over. And it started me to thinking, what if... Baked Brown Rice Risotto I'm calling this a baked risotto because of the texture- but we all know risotto is stirred patiently on the stove-top as we deftly sip our Italian white wine between stirs and nodding with the appropriate casual flair as we converse about movies or pop culture politics). Any chunky veggie soup could work, I imagine. 2 1/2 to 3 cups cooked short grain brown rice 1 1/2 cups chunky soup with vegetables, such as a mulligatawny or minestrone Extra seasonings- anything your little heart wants to add (more garlic, spice, herbs) For serving: Preheat the oven to 350 degrees F. Serves 3-4.

Queens, New York OK, officially it's a part of NYC, but this borough has a population of 2.3 million and virtually qualifies as a city in itself. It might lack the glamour of Manhattan, but it's still one of the most diverse places on the globe. "Queens is definitely overlooked ... More than 170 languages and dialects are spoken in the borough -- residents say it's like going around the world without ever leaving. First stop? Then there's Flushing, home to the U.S. Other "musts" include the Museum of the Moving Image and the Bohemian Hall & Beer Garden, a relaxed neighborhood park and watering hole serving Czech beer and food with live music -- perfect in warmer months. One day two summers ago while our family was on vacation, we were served little shot glasses of green smoothies at breakfast. There was definitely a mental block we all had to get over – a green drink doesn’t have to taste like a savory dish of vegetables. The other day, I made a batch of this Beginner Green Tea Green Smoothie using spinach, green grapes, bananas, and green tea, and served it in little shot glasses to my kids at breakfast. I call this a Beginner Green Tea Green Smoothie because this recipe uses more fruits than vegetables, so although this smoothie is definitely green, it tastes fruity, not vegetal.
