Crock-pot BBQ Chicken Thighs We’re on the final countdown to Thanksgiving, folks. Is that crazy, or is that crazy? All I know is that I’m glad I’m not hosting the meal this year. The holiday has snuck up on me and I’ve hardly given the big day much thought. Thanks for all your hard work, Mom. This recipe has nothing to do with Thanksgiving, but it’s easy and quick and would be a perfect meal when you’ve got a house full of hungry guests lingering around post-Turkey day. I’ve made this recipe every Sunday for the past month or two. So part of our weekend routine is to cook up five days worth of a chicken + carb meal and a beef + carb meal, on Sunday night. Insert: Crock-pot BBQ Chicken Thighs I use chicken thighs for this recipe because 1) Big Fisch prefers dark meat and 2) chicken thighs are cheaper. You will need: Chicken thighs, mustard, hot sauce, Worcestershire sauce, honey, BBQ sauce, salt and pepper. Now lean in and listen up. It really is that simple. It’s so easy I could do it in my sleep! Happy Monday friends!
Chicken with Apple Cider Sauce Today the temperatures really dropped and it was finally light jacket weather. Fall is on it’s way! Even though I’m having a hard time letting go of summer, I do love fall. Since I’m in such a fall mood this week for Tyler Florence Fridays I made Chicken with Apple Cider Sauce served over a bed of lightly Sauteed Fresh Apples. I made this dish exactly as written except I cut down the vinegar to 1 tsp. Chicken with Apple Cider SauceRecipe adapted from Tyler Florence 2 TBL vegetable oil 4 boneless, skinless chicken breast halves **See NOTE 2 tsp kosher salt Freshly ground black pepper 3 TBL unsalted butter 1 TBL apple cider vinegar (I used 1 tsp vinegar) 3/4 c apple cider 1/2 c low-sodium chicken broth 1 TBL fresh lemon juice 1 tsp fresh thyme leaves Preheat a medium to large skillet over medium-high heat, for about 1 minute or until the surface of the pan is hot. Chicken Fried Rice Our recipe turns fried rice on its head, relying on a ton of fresh produce, considerably less rice, and a bit of oil for crisping it up The name says it all: One of the most nutritionally dubious staples (white rice) combined with the most treacherous technique (frying). The calorie counts are predictably stratospheric; even a small scoop used as a base for a stir-fry will run around 500 calories. You'll Need: 1 Tbsp peanut or vegetable oil 4 scallions, greens and whites separated, chopped 1 Tbsp grated fresh ginger 2 cloves garlic, minced 1 medium zucchini, diced 2 carrots, diced 2 cups bite-size broccoli florets 2 cups mushrooms (preferably shiitake), stems removed, sliced 1/2 lb boneless, skinless chicken thighs, sliced into thin bite-sized pieces 4 cups cooked brown rice 2 Tbsp low-sodium soy sauce 2 eggs, lightly beaten How to Make It: *In a wok or a large nonstick skillet, heat the oil over medium-high heat.

Soy Balsamic Slow Cooker Chicken - Home - Kiss My Whisk I know I have said this before, but it honestly always takes me 2 tries and a Google search to spell balsamic correctly. Okay now that I have that off my chest we can move on. In preparation of our anniversary in a few weeks, we transported the top tier of our wedding cake from my parents freezer to our freezer this weekend. It's in a huge box, so this meant that I had to clear out a shelf of my jam packed freezer. So I thawed a lot of chicken, and decided I would figure out something to do with it in the slow cooker. This morning I woke up, realized I thawed 3 packages of chicken and needed to throw together something in the slow cooker before heading to work. Keep reading for the recipe, I've scaled it down a bit from what I actually did this time since most people don't need the amount of chicken I cooked. DirectionsPlace chicken and onion in slow cooker.
