How to Make A Quick Healthy Dinner You know the drill – you arrive home late after work. You’re tired. You don’t feel like cooking. Usually this means you end up having cereal for dinner, or hitting the drive through on the way home, or just eating a container of ice cream and calling it a night. But I promise if you have just a few things on hand you can throw together a really simple, quick, and nutritious meal with little to no effort. 1) First, your base. Spaghetti Pie: Meal in a Muffin These Spaghetti Pie Muffins are an adaptation of my recipe for "Spaghetti Pie" the casserole. They are just delicious. You can, of course, make this recipe in a 9x13 casserole pan, but making them into muffins is a fun variation that is also a wonderful way to have ready made meals in the freezer. They can be warmed up in a jiffy when someone gets home hungry and needs a snack or a dinner. Begin by browning 1 lb of lean sausage or ground beef in olive oil. Stir, brown and add 1 can of tomato sauce. While the sauce is cooking, prepare your spaghetti crust by stirring 1/4 cup of butter into 4 cups of pre-cooked spaghetti noodles. In a measuring bowl, put 1/2 cup of Parmesan cheese and 2 eggs. Whisk together well, and add to the spaghetti mixture. Divide spaghetti mixture into 12 muffin cups. Next mix together 3/4 of a cup of cottage cheese and 1/4 a cup of parmesan cheese. Spread this mixture over the spaghetti nests. Once Spaghetti sauce is done, spoon evenly into the nests. Spread open petals of each rinsed and trimmed, fresh Artichoke for seasoning and place directly into the crock pot, stem down (Note: removing the stem will allow the Artichokes to sit better in the crock pot). Between the petals of each Artichoke, add lemon juice and a drizzle of olive oil, and sprinkle with salt. Stuff minced garlic in between the petals of each Artichoke.
