I blame coconut flour. As much as I love the coconut flavour it gives food, I absolutely hate the way it tends to dry out recipes and leaves food a little grey.. These cookies are really nice, they're crunchy & a little chewy at the same time... You do need a little bit of time on your hands though since you'll need to chill the dough for a few hours to allow them to firm up. Paleo Chocolate Haupia Pie Squares. Haupia is a tradition Hawaiian dessert often eaten on its own or as a topping for chocolate mousse pies or wedding cakes. Hawaii really is an amazing place to live, especially because I absolutely love fresh coconut and there is plenty of it here year around. Paleo Butter Pecan Caramel Ice Cream. A little while ago I posted my recipe for Paleo Caramel Sauce that I told you I would be serving along with ice cream to some friends. The texture of the caramel sauce is smooth and creamy like we are used to and there are only four ingredients needed: water, raw coconut palm sugar, coconut milk and vanilla extract. Butter Pecan Ice Cream is one of my all time favorite flavors and a caramel swirl made this ice cream even more delicious! My opinion is that this homemade ice cream beats any store bought, sugar loaded ice cream.

These cookies cook down very thin, almost like lace cookies. Make sure you really mix all of the ingredients well; otherwise you’ll have pockets of honey bubbling out the sides of the cookies during the baking phase. Ingredients 1.25 cups walnut meal (use a food processor)3 tablespoons ghee or organic unsalted butter, melted1/4 cup raw honey1/2 cup chopped dried cherries (no added sweeteners)3.5 oz 70% dark chocolate bar, chopped into small chunks1 teaspoon orange zest1/4 cup unsweetened coconut flakes2 tablespoons unsalted sunflower seeds Directions Preheat oven to 350 degrees.Mix all ingredients.

So now that we’ve all had our chocolate fix, I’d say it’s time for more don’t you? I think chocolate cookies are in order and there’s no mistaking the presence of chocolate in these cookies. While we all have our favorite holiday cookies, it’s nice to mix in some new ones among old favorites, so I do hope you’ll make these this season, or for any occasion for that matter.
