(to keep)Thirsty For Tea Dim Sum Recipe #12: Golden Pineapple Buns (Bolo Bao) Happy Chinese New Year!! I hope the Year of the Sheep finds you in good sprits and ready to eat! Yesterday my family met up for an early celebratory Chinese New Year dim sum lunch. For the first time, the hubby and I actually gave red envelopes to my niece, Maddy. As as gesture of promise and prosperity during this holiday, it’s custom for older people give good luck money stuffed in small red envelopes to the little ones. This year, the hubby and I decided to finally acknowledge ourselves as older people. Along with red, gold is also an iconic color during Chinese New Year. Just so it’s clear, there’s absolutely no pineapple in these Golden Pineapple Buns. This bun dough is adapted from my recipe for Baked Char Siu Bao. The Kyotofu bakery featured Nicole’s quirky approach to Japanese sweets and customers fell in love. In 2013 Nicole and Michael decided to close the restaurant so Nicole could focus on building Kyotofu into a bigger and better business. Nicole has since written a book, Kyotofu: Uniquely Delicious Japanese Desserts, as a way to give people access to the sweets they once served at their restaurant. I was recently sent a copy of the book to review and I loved it from page 1. These chocolate dulce de leche empanadas are made with a homemade chocolate empanada dough and filled with creamy dulce de leche or caramel. Dulce de leche is very popular in our house, sometimes we make it home from scratch, other times we buy it at the store; regardless it doesn’t last long around here.

I wanted to combine these two favorites into one, but I also happen to love the taste of chocolate + dulce de leche so wanted to try making a chocolate empanada dough instead of the standard sweet empanada dough. I was a little bit concerned that adding cocoa powder to the dough would make it very fragile and hard to handle, however it worked out fine and tasted great when baked.
