Two Minute Chocolate Peanut Butter Cake
This, friends, is where procrastination gets me. I was staring at the computer, mired in writers’ block. I clicked on that Stumble button I installed in my toolbar but never use.
Kiss Pies
Only 5 days before Christmas! Woohoo, is everyone ready? What a great time of year. This really is the best…..even if I feel like I’ve gained 50 lbs the last month! I’ve got such a fun little pie to share with you today that really couldn’t get any easier.
Prawn and Scallop Ceviche with Heirloom Tomatoes
When I am looking for fresh and delicious recipes that focus on health and nutrition as well as culinary wonderment, I turn to Chef David Wells or Grandma Dave. I’ve known Dave more than twenty years and have enjoyed every moment of our friendship. During those years, I’ve watched in awe as he’s cultivated his passion as a chef into a business that also focuses on assisting people with any level of nutritional concern – from losing a few pounds to terminal cancer.
No-Bake Chewy Cookies and Cream Bars
Oh how I love a treat that can be whipped up in about 15 minutes. My boys and their buddies couldn’t get enough of these Chewy Oreo Bars we had as an after school snack this week. Sometimes my spontaneous recipe creations turn out to be the most fun, lol! Yes you use an entire package of Oreo Cookies, but what you get in return is a marshmallow-y Oreo treat that is worth every bite Surprise the kids (and yourself) with this one, they’ll be all smiles, Enjoy!
Almond Crusted Fish Tacos
I am a germaphobe. I’m attracted to straight teeth. I will always choose to go through food magazines versus gossip magazines. But, when I go to Barnes and Noble to peruse the magazines…I love catching up on the gossip. You know you do too!
Salted Caramel Apple Pound Cake (And a Giveaway!)
When life gives you left-over Salted Caramel Sauce, I say make pound cake! With fall teasing us in the Dallas area, the temperatures are fluctuating between 100 and 80, I find myself feeling very domestic. The cooler weather puts me in the mood to putter around the house organizing books, clearing out closets, and whipping up cozy treats in the kitchen.
Smoky Sweet Potato Burgers with Roasted Garlic Cream and Avocado
Before we talk burgers, let me tell you what I’m doing. I’m eating some blueberry yogurt pretzels (which are oh-so awesome… but would be even awesomer if they were really coated in yogurt and not white chocolate disguised as yogurt) and drinking a san pellgrino aranciata that is spiked with um… vodka, malibu and tequila. With those pretty perfectly square ice cubes.
Green Smoothie for Weight Loss?
One of my absolute favorite things is a Green Smoothie. It’s a fast, easy, and delicious way to get a big dose of vitamins and minerals, plus it tastes FANTASTIC!! Don’t let the color’s fool you!! It is sweet and filling – even the kids love it!! They love to name it the “Monster Smoothie” or “Shreck Smoothie” or some other fun name but believe me, kids go crazy for it!!
No-Churn homemade icecream
This ice cream recipe has only four ingredients, takes less than 10 minutes to make, and will leave you wanting more every time. Grab 5 fresh strawberries. You can use any fruit you like, or add 1 teaspoon vanilla extract and top with hot fudge. Wash and slice the fruit, then put it in a food processor. Add 1 tablespoon of sugar and pulse until the fruit is pureed. Add the pureed fruit to a large mixing bowl.
BLT Salad
Here's a salad version of America's favorite sandwich. We use shredded tomato as a base for the creamy tomato-and-chive dressing--adding great tang and flavor along with extra vitamin C. Ingredients 1 cup cubed whole-wheat country bread

Picture this scene: it’s 8:30 in the evening. The sky is just starting to get dark outside your living room window. You ate a delicious, healthy and veggie-filled dinner a few hours ago and now you are ready to sit down to the most recent episode of So You Think You Can Dance and dive into a decadent plate of dessert.
