Potato-Leek Soup Recipe I don’t think I’ve ever made a New Year’s resolution. Even if I did, I likely didn’t have much success sticking with any of them, so I just don’t bother with them anymore. Usually resolutions involve quickly-forgotten rules about eating better, losing weight, and saving money. I kind of have a funny relationship to soup. So where do I start with this one? Well, for those who want to save money, I’ve venture to say you could make a giant pot of this soup for in the vicinity of two bucks. If you think potatoes are those dusty things at the supermarket that you lug home by the sack, that’s true. For this soup, I used what they call Monalisa potatoes. Aside from a resolution I should adopt about talking too much about my personal life, for the other two resolutions—losing weight and eating better, this soup uses just a soupçon of butter or oil, and all those potatoes are a good source of vitamins A and C. Paleo Chocolate Chip Cookies | thebitesizedbaker I am a big fan of anything that justifies eating five cookies at 7 in the morning before working out… Which is why “paleo” and “cookies” are really a match made in CrossFit Heaven. I tend to be THAT girl who brings in baked goods to a work-out class and tortures everyone with the overwhelming aroma of freshly baked cookies. But everyone was singing a different tune when I brought these babies in! One of my trainers, Clark is a big fire-fighter with an aptitude for baking and he actually CREATED this recipe. But there is no butter! I immediately requested that Clark send me the recipe so I could recreate these goodies. I promise my next dessert will include gluten and refined sugars… But if I didn’t mention they were paleo in the title would you have been able to guess it? Vegan Detox Green Monster Smoothie {with kale, strawberry, cucumber, & banana} Do you find it really difficult to eat healthy when Fall comes around? I do. An easy morning smoothie; it’s vegan, and delicious enough to make you forgive yourself for all of that excessive cookie consumption last week. So what’s in this little green monster? Almond Milk — Not only is almond milk dairy-free, but it provides excellent nutritional benefits. Sometimes I add in the following: almond or peanut butter, blueberries, mango, ginger, or lemon. I usually end up drinking this smoothie in the morning right when I wake up for a burst of energy. You typically don’t taste the Kale (or you can use spinach!) There are really endless possibilities. Low Carb Pizza I gave in, I made the 'flower pizza you all recommended and I tell you what... you were absolutely right. This stuff is life changing! Mum isn't allowed carbs because she's pre-diabetic. The other day I spotted her looking longingly at my slice of homemade pizza and decided I was going to give in and give carb-free pizza a go, for her. If you're carb free, paleolithic, gluten free or just trying to cut back a bit then this is a total winner. Just look at this! I based my recipe on one from Lucky Penny. To make one pizza you'll need: 1 small cauliflower 1/4 cup freshly grated parmesan 1/4 cup grated mozzarella 1tsp dried oregano 1 big clove crushed garlic 1 egg Pinch of salt & pepper Toppings: Tomato pizza sauce (homemade or from a jar if you like) About a cup of grated mozzarella 1 big pinch dried oregano Any goodies you fancy! Pre-heat your oven to 220C/430F and pop a large, flat baking tray in there to get hot too. Grate your cauliflower until you're left with 'rice' (about 2 or 3 cups). Slice it up!
A Different Kind of Smoothie I sat down with a precious girlfriend for lunch at Fiddlecakes the other day and she told me about green smoothies. Huh? It was a smoothie, but was packed with greens such as spinach and kale, fruit, and sometimes even protein powder. Munching on my gluten free brownie, I listened as she told me about how much energy she and her husband have had since they’ve started drinking them. Well, since trying one (which I was a bit nervous about, I’ll admit) I’ve been hooked and have really noticed a difference in my energy. Plus I’m getting nutrients in my system that I’d never get normally because I’d frankly never eat this many greens on my own. Back On Track Green Monster (Banana-Free) Aside from my current career in the food business, many of you may not know that I also moonlight as a Barber. The job is not to be taken lightly as it requires a fine attention to detail and precision, something I have no place in assuming much skill. However, I’ve had some practice in this area with recipe development and I figure it’s always wise to develop a new skill set for the resume. Every month, Eric calls me into the bathroom where I find him stripped down to his boxers with his Deluxe hair trimming set splayed about, clutching the large electric trimmer in one hand. The most difficult aspect of this task is by far the point at which I have to trim the base of his hairline and make a very, very, very straight line. "Looks good to me", I say with a nod then disappear from the room. Except this time Eric returned home from work with some rather upsetting news. "Pete had a good laugh today." "Oh yea?" Pooh Bear Smoothie The following article was written by Carissa Leventis-Cox of Mama in the Kitchen, and she ain’t cookin’! I can’t say it’s always easy feeding my family vegetables. Fruits are easy, but vegetables can be tough—particularly greens. Sometimes, as soon as my son sees a huge plate of salad in front of him, he sulks and says, “Oh no! Admittedly, the easiest way to get my son to eat more greens is through green smoothies. Here is a recipe for our basic smoothie, which my son says “tastes just like honey” (although the recipe only contains fruit), which is why we have named it our “Pooh Bear Smoothie.” Pooh Bear Smoothie 2 dates (optional, but children prefer a sweeter smoothie) 2 cups or 2 big pieces seasonal fruit* 3 bananas (I sometimes freeze my bananas for a cooler drink in the spring and summer) 4 cups seasonal leafy greens (or more) 2 cups water (less or more depending on your preferred consistency) Purée all the ingredients in a high-speed blender. Makes 4 servings
Quinoa Granola Bars I love granola bars, but I always have a problem with the store-bought kind: if I like the dried fruit, I don’t like the nuts and vis versa. Customizing your own granola bars is easy. I’ve included every nut and fruit I love, including some new additions like flax seed and toasted quinoa for that extra crunch! Ingredients:1/3 cup honey1/4 cup maple syrup1/4 cup coconut oil1/3 cup almond butter1 cup cashews1 cup slivered almonds1 cup of coconut flakes, unsweetened1 cup dried cherries2 cups oats1 cup uncooked quinoa, rinsed and dried1/2 cup flax seedsFlake sea salt to taste Preheat oven to 350 degrees. Pour into the bowl of ingredients and fold to coat evenly. Line a 9 1/2 x 13 1/2 pan with parchment paper. Sprinkle the tops with a little sea salt. Allow to cool entirely.
