You may recall that I have a minor muffin obsession. I like to bake them almost as much as I like to eat them. My obsession with those big bakery style muffins took over a recent baking related conversation that I had with Amber and we’ve both been on the search for muffin perfection ever since. When I stepped outside last week after a brief rainfall and got my first official whiff of fall – the only thing on my mind was apple muffins. I didn’t want these to be typical muffins with barely recognizable pieces of apple and a little spice. These are quite possible my favorite muffins ever. Although these muffins may not have the same puffy look of beautiful muffins from the bakery, they taste incredible and are the perfect way to take advantage of apple season. The recipe was featured in a recent issue of Cook’s Illustrated (Sept/Oct 2012). Often, the test kitchen remakes recipes that I am already familiar with, looking for a better way to approach them. This time, I hadn’t heard of this particular kind of cake before, but it sounded too good to resist and I gave it a try as soon as I had a chance.
The cake is rich, eggy and custardy, with 1 1/2 pounds of thinly sliced apples packed into it. On top of that custardy layer is a thin layer of tender, fluffy cake. The apples for this cake are cut into very small pieces that are cooked in the microwave prior to being incorporated into the cake batter. With my apple pie I prefer a slice of cheddar to any ice cream. And when making an apple pie myself, I incorporate the cheese in the crust. I’m sad that, with all the moving and such, I haven’t enjoyed much of a summer, but I adore the autumn, so there’s nothing to complain about. Isn't it worse to place him on the floor?] Sure, there were one or two hundred fewer fire engine parts, stuffed hedgehogs and train tracks scattered across the living room carpet, and maybe we looked a little younger and better-rested; I probably didn’t have my iPhone wedged between sofa cushions the way I do right now so that my talking-walking-doing things mini-human couldn’t co-opt it to watch Elmo videos again (how does he find them?)
Moist Apple Spice Bread. Some quickbreads are very moist and dense, while others are a little bit dry and very bread-like. This moist Apple Spice Bread falls into the former category. The bread is ultra-moist and is packed with two cups of shredded apple, from two whole apples! Apple Pie Coffee Cake with Cheddar Cheese. Whenever I bake or serve an apple pie and my grandmother is around, she always tries to convince me to put cheese on top of it. Cheese – especially cheddar cheese – and apples are a great combination general, so even though it might sound like an odd pairing as far as pie goes, the salty flavor of the cheese goes pretty well with the sweet apple filling of the pie.
That being said, I always just gave my grandmother a slice of cheese to eat alongside her pie and kept mine cheese-free. I simply like pie crust too much to adulterate it by letting cheddar cheese melt all over the top. I’m open to using the cheddar cheese and apple match in other foods, so I opted to include a cheddar cheese layer on top of this apple pie-inspired coffee cake. The coffee cake has a base of vanilla cake that is topped off with some apples cooked into a kind of homemade apple pie filling. If you want to leave the cheese off of this coffee cake, go right ahead.

Butter or spray with a non stick cooking spray, an 8 inch (20 cm) square baking pan and then line with parchment paper or wax paper. Peel, core, and chop the apples into bite-sized pieces. Toss with 1 - 2 tablespoons of lemon juice. In the bowl of your electric mixer (or with a hand mixer), combine the flour, sugar, baking powder, ground cinnamon, and salt. Transfer the batter to the prepared pan and smooth the top.
