Zucchini “Meatballs”
These meatless meatballs were a HUGE hit in my house, I even let my neighbors and friends try and everyone loved them! Made with grated zucchini, garlic, Pecorino Romano, basil, bread crumbs and egg, then baked in the oven and finished in a pomodoro sauce. Serve them as an appetizer, over zoodles, whole wheat pasta or with a crusty piece of bread on the side. A few weeks ago I made these awesome eggplant “meatballs” and the most asked question I got in the comments and on Facebook was can you make them with zucchini? Loving the idea, especially since I have a few giant zucchinis on my counter I put this to the test and they turned out awesome!
How To Make DIY Instant Noodle Cups — Cooking Lessons from The Kitchn
(Image credit: Emma Christensen) I think I can skip the sales pitch here and get right down to brass tacks, yes? I love noodle cups. You love noodle cups (you know you do). But none of us really loves the weird artificial ingredients or the flavorless nubs of dehydrated vegetables that come along for the ride. Let's fix this situation.
Pip & Ebby - Pip & Ebby - Hot cocoa cookies
I am a teeny bit obsessed with the cookies from the most recent issue of EveryDay with Rachael Ray magazine. This recipe is the second of many cookie recipes on my list to make this holiday season. Sweets are taking over my life! Just ask my coworkers.
Homemade Nutella
There’s something so wonderfully addictive about Nutella. I’m not sure what it is, really, maybe the aroma of the hazelnuts mixed with the soft texture of the chocolate, and the knowledge that you can spread it on your favorite foods and call it breakfast the way the Europeans do. Clearly, the Europeans are very intelligent when it comes to breakfast. When I saw this recipe for homemade Nutella from Elana’s Pantry, I loved the simplicity of the ingredients that she used.
Caprese Stuffed Portobellos
These stuffed portobellos are such a delicious way to take care of that caprese craving you have been having! They are filled with a creamy mozzarella cheese, cherry tomatoes, and topped with basil! Just waiting to be demolished at any point in time! Just the way the cheese browns at the top is sooooo mouth watering! Don’t even get me started on butter sauce, and the glaze!

20 Calories, 3 Carbs, and It Doesn't Taste Like Ass? No Way!
I had a dinner tonight that was uber healthy. It was delicious, and all three of my kids gave it a thumbs up. I’m sure you’re dying to know just how healthy it was, right? I’m gonna break it down for ya right now. These noodles have:
Indian Spinach and Chickpeas curry
Its funny when many people I know assume I have lots of time to burn, cos I sit and cook so much! Why funny? - you might ask.

Classic Miso Soup with Tofu
Sushi, I think it’s one of my love languages. Sticky rice, spicy salmon, fresh vegetables, fiery wasabi and salty soy sauce. And don’t even get me started on pickled ginger. Wasabi + soy + ginger = flavor bomb. I can barely handle it. Needless to say, John and I have put sushi on heavy rotation in our eating out options.
