Strange really, considering that when I started Joy the Baker I was working as a baker in a rowdy kitchen. Still, I would find myself coming home in the middle of the afternoon, still looking around for people to bake with. Maybe I was a little obsessed… Where do obsessed people go to find friends that understand them? The Internet… obviously. (What feels like) ages ago I joined an online baking group called The Daring Bakers. Being part of The Daring Bakers was instrumental in helping me grow my blog audience, helping me make great baking friends online, and helping me realize that I really should never attempt to make a baguette in my home oven ever again… all really important things.

:) I seriously can't stop oohing and aahing about the change of temperatures over here! I was afraid to step outside this morning in fear that it would be back to our 100 degree temps. Nope! Even cooler than yesterday. Travis had the afternoon off yesterday so we headed out on a long stroller walk to the park. When we got home we discovered a big ugly visitor in our backyard. After our dog kept barking at it and it didn't go anywhere we realized it was injured.
Last night I started making The Pioneer Woman's Cinnamon Bread. Two hours of initial rising, make the loaf, another two hours of rising and then 40 minutes in the oven. I woke up at 4:45 this morning and popped it in the oven for Trav to have before he left for work. Cinnamon tortilla chips with fruit salsa. She’s the friend who helped me try my failed Turkish Delight recipe back in December. For ages, she’s been telling me about these cinnamon tortilla chips with strawberry pineapple salsa and a sweet glaze she had at a party once and then adapted herself. Last week, we finally managed to get together, and she showed me how to make them. Oh, yeah. Cinnamon Toast Rolls. The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate.
I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious.
In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep. That’s it… some soft white bread, some butter and some cinnamon sugar. Trim the crusts off of the bread Roll the bread really flat Brush both sides of the bread with butter. Cinnamon Sugar Apple Pie Eggrolls. Is anyone else still holding on to apple season for dear life?
I mean really, apples tend to be more of a fall thing but I just can’t get enough of them right now. And when I say that I think it’s fair to disclose that I can’t get enough cinnamon and sugar either. The thing that I’ve also become recently super obsessed with is eggroll wrappers. Those suckers work great for everything and automatically make it suuuuuuuuuuuper fancy. Ham & cheese sandwich? Or in my case, apple pie? P.S. 2 medium apples (I used Gala apples)3 Tbsp sugar, divided2 Tbsp flour4 eggroll wrappers2 tsp cinnamon, divided2 cups vegetable oil (if frying) OR 1 Tbsp vegetable oil (if baking) Peel and grate both of the apples into a medium bowl. To bake: Preheat oven to 400 and place the eggrolls seam side down on a sheet pan lined with parchment paper or a Silpat.
To fry: Gently heat 2 cups of oil over low heat until about 350 degrees. Toss together the remaining 1 Tbsp of sugar and 1 tsp of cinnamon. Scrumptious Baked Cinnamon Breakfast Bites. Per the requests I got after my last cinnamon roll post, here is the recipe for my tried-and-true vanilla pudding cinnamon rolls with cream cheese frosting.
The vanilla pudding is simply added to the dough to make it extremely soft and pliable – and oh, does it ever. (No surprise, this recipe comes direct from my Aunt Marilyn whose recipes have made a great showing on this blog already.) I made these last week and it confirmed my feelings: I am in love with these cinnamon rolls. The dough is so extremely tender and soft, it will blow your mind, and the cream cheese goodness of the frosting is beyond delicious. The filling is made up of brown sugar and cinnamon and it gives a great richness to the standard cinnamon and white sugar combo.
