I have had enough of Winter! Snow continues to fall almost every day and my Spring Fever is in full go! In order to get me through those February gloomy days in Ohio, I decided that this week I would dust off my water bath canner and put it into use. Nothing makes it feel more like summer than hearing those jars “pop” as they cool on the counter top. So, in my quest to break the winter blues, I decided to buy strawberries from the grocery store and begin my experiment for the perfect strawberry jam. As most of you know, we are trying to make most of our food from natural ingredients.

This was pretty good. I used my food processor to make the dough with frozen butter. I used apple cider vinegar instead of white -- it was all I had. I was making a sort of jamaican beef patty and samosa hybrid out of this, so I added about a tablespoon of curry powder and a little nooch (brewers or nutritional yeast) to the dough for flavor and color. I was out of traditional eggs, so I made a flax egg instead. Dough was slightly crumbly but not hard to work with at all.

If you don't have a food processor, place the crackers in a large plastic bag; seal and then crush the crackers with a rolling pin. Add the melted butter and sugar and pulse or stir until combined. Press the mixture into the bottom and side of a pie pan, forming a neat border around the edge.

I made this recipe the way it was written, and yes very yummy! I read several reviews commenting that they were more like cake, or just banana bread frosted. So I made them again, this time using a more traditional brownie making method.... and they turned out AWESOME! More dense like a brownie would be. Cut the sugar to 1 cup Melt the butter in a sauce pan, added the sour cream, sugar, and vanilla and let cool slightly Lightly beat the eggs, then added to the melted butter mixture Added the dry ingredients and mixed until just combined, then added the smashed bananas, and I used nuts. baked in same size pan as recipe called for, same oven temp, and baked 30-35 minutes Also like a brownie recipe, I only greased the bottom of the baking pan, and when I took them out of the oven, ran knife gently around the sides to loosen. Let cool slightly, then made frosting as directed and frosted while warm. then refrigerated until completely cool.
