If you follow me on Instagram you would have noticed that I was vacationing in Santa Fe, NM for an EARLY anniversary trip with my hubby. We had an amazing trip allowing us to eat, shop and site see through the gorgeous artsy town. Typically when I get home from a trip its after dinner or we pick something up so we don’t have to worry about dishes or cleaning up a mess. We arrived home pretty early in the afternoon so I knew dinner would be up to me. I’m not embarrassed to admit that I had my fair share of hamburger helper dinners while growing up. My parents would leave for a function and my sister and I would be in charge of dinner.

Buttermilk Pancakes
One of my son’s favorite breakfasts is buttermilk pancakes. Every morning when I wake him up, I ask him, “what would you like for breakfast – pancakes, waffles or bacon and biscuits?” More mornings than not, his answer is pancakes. My recipes is a bit sweeter than other pancake recipes I’ve tried before. It took me a while to finally make a light, fluffy pancake that didn’t taste like baking powder.
2-Minute French Toast in A Cup
Who’s got the munchies? Ha! Seeing as our Cup of Coffee Cake (in Under 5 Minutes) was our most popular post of 2011, I thought y’all might enjoy my other favorite last minute snack, which is even quicker and easier and more fattening (and therefore more delicious/more embarrassing to admit I eat on a regular basis). It’s french toast in a cup, made in your microwave and topped off with a generous ssquirt of ssyrup (which is making my ssssss key kind of sssticky right now).
Crock Pot Turkey White Bean Pumpkin Chili
A perfect fall chili made with pumpkin puree, ground turkey, white beans, green chili and spices. Top this with chopped fresh cilantro, scallions, jalapeños, light sour cream, and/or reduced fat cheddar and serve it with baked chips on the side for a wonderful lunch or dinner. I am so happy to share this one with you!!! Not all my crock pot experiments get me excited, but when they do they wind up here on Skinnytaste. The pumpkin is not sweet at all, in fact, if you don't mention it, no one would even know it's there but it does add beautiful color to the chili and for picky eaters, a great way to sneak in vegetables.

Heat the oven to 400°F. Grease the sides and bottom of a 8 or 9″ baking pan with cooking spray. Combine the ricotta cheese, buttermilk, sugar, melted butter, and vanilla in food processor and process until smooth, about 10 seconds. Add the flour, baking powder, salt, and baking soda and pulse in short bursts just until the dough clumps together (don’t overprocess).
