We are back. After one week of snuggling/adoring/talking/singing/kissing/feeding/diaper-changing little Elsa we feel it is time to start spending some time in our Green Kitchen again. Fear not – all you loving mums and dads out there – we will not take our eyes off of her just yet. Instead we will start out easy, with some recipes we tried out at the last week of Luise’s pregnancy. We came up with this recipe while dreaming of all our upcoming spring picnics. Gluten Free Spinach and Carrot MuffinsMakes 12 small muffins 1 cup buckwheat flour 1/3 cup cornflour 1 tsp baking powder 3 tbsp flax seeds (milled) or boiled quinoa 1/2 tsp salt & pepper 1/2 tsp nutmeg (grated) 3 eggs 1 cup yoghurt (we used a dairy-free soygurt) 200 g fresh spinach leaves (roughly chopped) 2 carrots (grated) 1 onion (grated) 1/2 organic lemon (juice and peel) 1 clove garlic (mashed) top with: 1/4 cup pumpkin seeds Set the oven at 350°F.

They arrived from Australia a week ago and we have been flying the foodie flag with gusto, exploring the culinary delights of Los Angeles. When my mom came home from the store with a load of "healthy" cereals and one special box of Golden Grahams, we all knew to pour a bowl immediately; it wouldn't last until breakfast. My dad munched Cap'n Crunch as a late-night snack, and we anticipated our grandmother's visits partly because that was the only time we'd get Honey Nut Cheerios. Two of my little brothers were bragging just the other evening about that time they took all the marshmallows out of the Lucky Charms, ate them, and put the cereal back in the box (generating an unhappy surprise for a sleepover friend later that week).
Now, I still love cereal, and I indulge from time to time, but lately I've been leaning on a breakfast that has a little more protein and a lot less sugar, a breakfast you can eat at the bus stop or in the car — which, for all its delights, is something you can't say for cereal. They aren't always easy to find, particularly if you are like me, living in the United States. For those of you who haven't heard of her, Rose is an accomplished UK-based cookbook author who focuses on vegetarian recipes - three million copies of her books in print. I loved the idea behind her golden, puffy, sun-dried tomato muffins which I came across in Vegetarian Supercook. Not only does their cottage cheese and ground almond base make them a smarter way to start the day, the combination of tomatoes, cheese, and basil baking in a hot oven makes your kitchen smell like a pizzeria.
Backing up a bit, one of the great things about Rose's recipes (generally speaking) is that many of them strike a strong nutritional balance. I encourage you to give these muffins a try, but keep a few things in mind. Let me know what you think of these, I really enjoyed them hot, as well as room temperature as a quick snack. I’m stopping in today to share these mini olive thyme muffins with you because I just couldn’t let the week go by without passing the recipe for these along. You may be saying to yourself “I can’t even think of baking another thing right now” but not to worry these little muffins are no effort at all and well worth turning on the oven for. My trustworthy kitchen garden is also providing some special treats - lots of different kinds of mint are flourishing and they can certainly give that extra sweetness and freshness to salads, as well as a bowl of plain yoghurt sprinkled with cinnamon.
Last weekend of summer - A day on the boat and thyme, pine nuts and feta muffins. It is the last weekend of summer here in Sydney! Saturday was beautiful so we decided to pack our picnic basket and bags and spend the day on the boat at Sydney's beautiful Pittwater. It was a stunning day and every time we go boating it feels like such a luxury. I love getting away from the city, away from all the traffic noise and masses of people. There is no better way to enjoy this beautiful city than on water and it really is the best way to relax and just get away from it all.
